Vegetable Stew with Chipotle Chili

A hearty, healthy vegetable stew with a hint of smoky flavor.

2 tablespoons olive or canola oil
1 medium onion, chopped
2 teaspoons minced garlic
1 large green pepper, chopped
1 large or 2 small zucchini, chopped
4 large celery stalks, diced (can add leaves in also)
1 cup shredded carrots
4 tablespoons Mrs. Dash chipotle seasoning
1 29-ounce can of crushed tomatoes
5 cups vegetable broth

Saute vegetables with chipotle seasoning in oil until slightly softened.  Add tomatoes and water or broth.  Simmer on low heat for about 1 hour until flavors are well blended.

Optional:  Add 1 cup of small whole wheat pasta shells or your favorite canned beans (e.g., pinto or small white beans) at the beginning of simmering.  Also very nice topped with some grated cheese (for vegans use soy based cheese or other vegan selection).
