"Dirty Rice" with Black Eyed Peas

A very tasty version of this traditional southern dish.  Round it out with cooked greens or any kind of brightly colored veggies--yams, beets, green beans, or your choice of mixed veggies.  It will hit the spot!

8 ounces veggie sausage, chopped (can use 6 oz of precooked breakfast sausage)

1 tablespoon olive oil
1 medium onion, chopped (about 1 cup)
1 medium  tomato, chopped (about 1/2 cup)
1 small green pepper, diced (about 1/2 cup)
1 teaspoon minced garlic
1 cup quick cooking rice (uncooked) 

1 cup vegetable broth
1 16 oz can black eyed peas, with liquid
3 tablespoons tomato paste
1 teaspoon thyme
Salt and pepper to taste

In a medium sauce pan, brown sausage in olive oil, then add onion, pepper and garlic and sauté until soft.  Stir in remaining ingredients and simmer until rice is done and flavors are blended, about 20 minutes.
